Getting ready for some slow roasted tomatoes

I was prepping these yummy tomatoes in the garden while the cats played. But then Sark jumped the fence and everyone had to go inside. He is the Anne of Green Gables of this house: total sweetheart whose impulsive nature gets him in trouble.

  1. I have never slow roasted tomatoes and I’m going to have tons. I guess I need to research what to do!

    Oh Julie, they are so easy and so delicious! I just chop them up, toss with some olive oil and some minced garlic and roast for two hours at 300. When they cool down I throw them in freezer bags and freeze them to enjoy all winter. Mel does something similar, I got the idea from her.
